Creamy Chocolate Peppermint Jello

This Creamy Chocolate Peppermint Jello is everything you want in a festive dessert:
smooth, chocolatey, refreshing, and incredibly easy. The best part? It’s high in protein, lower in sugar, and made with wholesome ingredients you probably already have.

Ingredients:

½ cup milk (any milk, I used soy milk)

3.5-4g gelatin powder

1 cup plain Greek yogurt

2 tbsp cacao powder

1-2 tbsp sweetener of choice (I used maple syrup)

1 oz semi-sweet or dark chocolate, finely chopped

½ tsp vanilla

¼ tsp peppermint extract

Optional:

½ scoop chocolate protein powder

Topping (optional):

Shaved dark chocolate

Chopped peppermint candies

Whipping Cream

Instructions: 

  1. Add your Greek yogurt to a large measuring cup (4 cup) or the actual container you will store it in and set aside.

  2. In a medium sized pot add your milk, gelatin, sweetener, cacao powder, vanilla and peppermint extract. Get this to a slight simmer stirring frequently. (Note: if you are using protein powder whisk through cold milk until dissolved before turning on the heat)

  3. Turn off the heat, next add your chopped chocolate and stir until it has completely melted. Remove from heat.

  4. Let mixture cool for 2-3 min before pouring it into your Greek yogurt.

  5. Mix until it has fully incorporated, and add it to a container with a lid or divide the mixture into two serving glasses.

  6. Refrigerate 3-4 hours until completely set

  7. Refrigerate covered for 4-5 days.

  8. When ready to serve, sprinkle some shaved chocolate and crushed peppermint candies. Whipping cream would also be a great addition.
