Protein Strawberry Jello

Looking for a creamy, high-protein dessert that’s naturally sweetened and so easy to make? This Protein Strawberry Jello is the perfect no-bake treat with over 18g of protein per serving — made with fresh strawberries, Greek yogurt, gelatin, and naturally sweetened for a simple yet delicious balance of flavor and nutrition.

Ingredients:

1 ¾ cup fresh or thawed strawberries, 280g (or any fresh or thawed berry)

¼ cup water, 60g

2 tsp lemon juice, 10g

2 tbsp maple syrup, 30g (use any sweetener and adjust amount to your liking)

7g gelatin powder, or one packet (I use the Organika Bovine Gelatin, any gelatin will work)

1 ½ cups plain Greek yogurt, 480g

OPTIONAL:

1 scoop vanilla protein powder, 30g (I used New Zealand Vanilla Whey Isolate)

3-4 tbsp milk or water, 45-60g (not necessary if you omit protein powder)

Instructions: 

  1. Add the protein powder to a small dish and add 3-4 tbsp of milk or water, mix to create a runny consistency. (I used 2 tbsp but I should have added a little more liquid to dissolve the protein powder better)

  2. Add your Greek yogurt to a large measuring cup (4 cup) or the actual container you will store it in and add the protein powder mixture, mix until incorporated 

  3. Next, add your strawberries and ¼ cup water to a blender and blend until smooth

  4. Pour your strawberry mixture, lemon juice, sweetener of choice, and gelatin to a saucepan. On medium heat get the mixture to a simmer and simmer for 1 min. Remove from heat

  5. Let mixture cool for 2-3 min before pouring it into your Greek yogurt mixture

  6. Mix the strawberry mixture into the Greek yogurt until it has fully incorporated, and add it to a container with a lid or divide the mixture into four serving glasses.

  7. Refrigerate 3-4 hours until completely set

  8. Refrigerate covered for 4-5 days.
