Protein Fudgesicles

These rich, creamy Protein Fudgesicles are the perfect healthy chocolate treat to cool you down while fueling your body! Made with cottage cheese, Greek yogurt, protein-rich milk, unsweetened cocoa powder, real dark chocolate, and naturally sweetened with maple syrup — these fudgy pops are packed with protein, healthy fats, and just the right touch of sweetness.

Ingredients:

1 cup 4% cottage cheese

½ cup Greek Yogurt (at least 3% fat)

1 ½ cup milk (any milk except low fat or zero fat)

3 tbsp unsweetened Dutch-processed cocoa powder

8 ounces dark chocolate, chopped (use your best chocolate here)

½ tsp vanilla

1/4-1/3 cup maple syrup (any liquid sweetener or any powdered sugar)

Instructions: 

  1. Melt your chocolate in the microwave in intervals or on a double boiler until smooth.  Allow it to cool for a few minutes.

  2. Add cottage cheese, Greek yogurt, milk and vanilla to a blender and blend until smooth (the 2 cup blender will not hold this entire mixture)

  3. Next add your cacao powder, melted chocolate and ¼ cup maple syrup. Blend until incorporated. Taste the mixture, if you need it to be sweeter add an additional 2-3 tbsp of maple syrup.

  4. Pour into popsicle molds and freeze for at least 6 hours or until frozen.  Remove from freezer and unmold and serve. Note: Depending on the mold you use you may have to let them sit at room temperature for 10 min before unmolding.  This recipe makes 11-12 fudgesicles.
