Healthy Lemon Lime Bars

Naturally gluten-free, refined sugar-free, and bursting with fresh lemon-lime flavor, these Healthy Lemon Lime Bars are the ultimate better-for-you treat. With a buttery almond flour crust and a citrusy collagen-infused filling, each bar delivers a perfect balance of tart and sweet, while packing in healthy fats, protein, and fiber.

Ingredients:

Crust

  • 1 1/4 cups almond flour

  • ¼ cup ground flax (or more almond flour)

  • 1/4 cup coconut flour

  • 1/4 cup maple syrup (any sweetener you like)

  • 1/3 cup melted butter, or coconut oil

  • 1 tsp vanilla

  • 1/4 tsp salt

Filling

  • 3 eggs + 1 egg yolk

  • 1/2 cup fresh squeezed lemon juice (about 2-3 large lemons)

  • ¼ cup fresh squeezed lime juice (about 2-3 limes)

  • 1/2 cup maple syrup (any sweetener you like)

  • 1 tbsp lemon zest

  • 1 tbsp coconut flour, sifted

  • 2 servings of collagen powder

    Instructions: 

  1. Preheat oven to 350F and line an 8×8 baking dish with parchment paper or nonstick spray.

  2. In a bowl, mix together all of your crust ingredients until well combined.

  3. Press into the bottom of the 8×8 baking dish and bake for 15 minutes.

  4. While crust is baking, whisk together all filling ingredients, adding sifted coconut flour last. Whisk until all clumps are gone.

  5. Once crust comes out of the oven, pour filling immediately on top.

  6. Lower oven temp to 325F and bake for 20-22 minutes or until filling is set. A little jiggle is ok!

  7. Let cool at room temperature for 30 minutes then transfer to fridge for at least 3 hours.

  8. Add powdered sugar (not paleo, but delicious) and cut and serve!
