Protein Coffee Jello
Looking for a creamy, high-protein dessert that’s naturally sweetened and so easy to make? This Protein Coffee Jello is the perfect no-bake treat with over 16g of protein per serving — made with real espresso, Greek yogurt, gelatin, and raw cane sugar for a simple yet delicious balance of flavor and nutrition.
Ingredients:
1 cup milk, 240g (any milk, I used soy)
1/3 cup raw cane sugar, 67g (use any sweetener and adjust amount to your liking)
7g gelatin powder, or one packet (I use the Organika Bovine Gelatin)
1 tbsp espresso powder, 5g (any instant coffee)
2 cups plain Greek yogurt, 480g
1 tsp vanilla, 4g
Pinch of salt
Instructions:
Add your Greek yogurt to a large measuring cup (4 cup) so you can easily pour the mixture into your four serving glasses
Pour your milk, sugar, gelatin, espresso powder, vanilla and salt to a saucepan. Get the mixture to a simmer (stir to dissolve the sugar and espresso powder)
Let mixture cool for 2-3 min before pouring it into your Greek yogurt.
Mix the coffee mixture into the Greek yogurt until it has fully incorporated, then divide the mixture into four serving glasses.
Refrigerate 3-4 hours until completely set
Either sprinkle with cacao powder or shaved chocolate
Refrigerate covered for 4-5 days.
