Pistachio Cottage Cheese Brownies

These Pistachio Cottage Cheese Brownies are the perfect fusion of rich flavor and wholesome ingredients. Packed with protein, healthy fats, and fiber, they’re an easy gluten-free dessert you’ll feel good about eating—no compromise on taste!

Ingredients:

3/4 cup cottage cheese, 170g

2 eggs or 3 egg whites

1 tsp vanilla extract, 4g

¼ tsp almond extract

½ cup raw cane sugar, 100g or granulated monk fruit erythritol blend, 90g

1 ¼ cup ground pistachios, 125g (approximately 1 cup shelled pistachios)

1 tsp baking powder, 4g

½ tsp salt, 3g

¼ cup white chocolate chips, 45g melted and cooled slightly plus 2 tbsp white chocolate chips, 28g, sprinkle on top before baking, optional (or sugar-free white chocolate chips)

1/4 cup pistachios, chopped 30g (optional)

Instructions: 

Preheat oven to 350 degrees F and grease and line an 8×8 baking dish with parchment paper.

Using your food processor or spice grinder (in batches with spice grinder), add approximately 1 cup of shelled pistachios and process until you get a flour consistency.

Melt your chocolate using a double boiler or microwave.  Set aside.

In a food processor or high-speed blender, combine eggs, cottage cheese, sugar, vanilla, almond extract, baking powder and salt until smooth. Then, pour in cooled melted white chocolate and blend again until combined.

Pour cottage cheese mixture into a medium sized bowl and add your pistachio flour. Mix until just combined.

Pour batter into the prepared baking dish and sprinkle the additional white chocolate and chopped pistachios, if using and bake for 20-25 minutes (or until a knife comes out cleanly from the center of the pan. Let the pan cool completely on a wire rack before slicing into 12 brownies.
