No-Bake Pecan Brownies
These no-bake pecan brownies are rich, fudgy, and loaded with flavor—everything you want in a brownie, minus the oven and guilt! Perfect for meal prep, post-workout snacks, or healthy dessert cravings.
Ingredients:
2⅓ cups toasted pecans, 245g
2 cups dates (Medjool, pitted), 400g
½ cup cacao powder, 40g
1 tsp vanilla extract, 4g
¼ tsp cinnamon
¼ tsp salt
3 tbsp warm water, 45g
1 cup semi-sweet chocolate chips, 170g
1 tsp coconut oil, 5g
Flakey Sea Salt, optional
Optional: protein powder (1-2 tbsp) or shredded coconut
Instructions:
1. Line an 8x8 pan with parchment paper, set aside.
2. On a baking sheet, toast your pecans at 350F for 7-8 min until lightly toasted. Set aside 1/3 cup and roughly chop. Set the nuts aside until they have cooled, 5 min or so.
3. Next, in a food processor, add your pitted dates, 2 cups of cooled pecans, cacao powder, vanilla, cinnamon and water (protein powder if using). Blend until it is a sticky mixture that when squeezed it will hold together. Add your chopped 1/3 cup of pecans
4. Evenly press that mixture into your 8x8 pan. Set aside.
5. Melt your chocolate and coconut oil in the microwave, in 10-15 second increments or use a double boiler.
6. Pour the melted chocolate over the date and pecan brownies, evenly spread the chocolate and sprinkle with flakey sea salt.
