Instant Chia Seed Pudding

Ingredients:
¼ cup chia seeds
½ cup water
½ cup milk (any milk, I used soy)
¾ Kefir, dairy or plant based (or ½ milk)
2 tbsp maple syrup (any sweetener you like)
1 tsp vanilla extract
Pinch of Salt
Dash of cinnamon (optional)
1.5-2 tbsp cacao powder (for chocolate flavoured chia pudding)
Directions:
Add your chia seeds to a bowl or reusable glass container. Bring your water to a boil and pour it over the chia seeds. Stir until is resembles a gel like texture, 20 seconds or so.
Next add your milk of choice and kefir (or more milk), mix until incorporated.
Add your sweetener, salt and vanilla. You could eat this as is or whisk in the cacao powder to make a chocolate chia pudding.
Enjoy!
Refrigerate the chia pudding for up to 5 days.
