Cherry Berry Crumble Bars

These Cherry Berry Crumble Bars are the perfect healthy treat for busy mornings, afternoon pick-me-ups, or guilt-free dessert. They’re vibrant, satisfying, and come together with simple whole-food ingredients. Whether you’re gluten-free, dairy-free, or just love a wholesome fruit bar, this recipe is sure to become a new favorite.

Ingredients:

Crust + Crumble

  • 1 1/2 cups almond flour

  • 1 cup rolled oats

  • 2 tbsp ground flax (optional)

  • 1 tsp baking powder

  • Add ½ tsp cinnamon

  • 1/2 tsp salt

  • 1/2 cup maple syrup (any liquid sweetener you like)

  • 1/3 cup almond butter (any nut or seed butter)

Filling

  • 2 cups frozen berries (I did 1 cup each frozen cherries & blueberries)

  • 1 Tbsp lemon juice

  • 1 tsp vanilla extract

  • 2 Tbsp maple syrup

  • 1/4 cup chia seeds

    Instructions:

  1. Preheat oven to 350F and line an 8×8 baking pan with parchment paper or nonstick spray.

  2. Add your almond flour to a lined sheet pan and toast at 350F for 6-7 min until lightly golden (toasting the almond flour is optional)

  3. Warm berries, lemon juice, and maple syrup in a saucepan on medium heat.

  4. Continually mash with fork or potato masher until berries are bursting.

  5. Turn off heat and add in vanilla and chia seeds.

  6. Stir and let cool completely, putting in fridge for 30 minutes, allowing the mixture to firm up.

  7. In a bowl, combine almond flour, oats, ground flax, baking powder, cinnamon and salt.

  8. Add in maple syrup and almond butter and stir, feel free to use your hands to make sure everything is blended completely. You should be able to pinch the mixture and have it stick together.

  9. Save a heaping 1/2 cup of dough to the side and flatten the rest into the 8×8 dish, pressing down firmly on the bottom. Set aside.

  10. After chia jam has chilled in fridge, pour the cherry berry filling over top of crust.

  11. Sprinkle remainder of topping evenly over top of filling and bake for 35-40 minutes or until golden brown.

  12. Let cool before cutting. Store in fridge up to 5 days
