Healthy Chocolate Brownie Banana Bread

If you’ve ever imagined the perfect blend of a fudgy brownie and a soft, tender banana bread — this Healthy Chocolate Brownie Banana Bread is exactly that! Naturally sweetened with ripe bananas and pure maple syrup, it’s rich in chocolate flavor, high in fiber and protein thanks to almond and oat flour, and irresistibly moist in every bite.

Ingredients:

3 very ripe medium bananas (ones with LOTS of brown spots), mashed (1 ¼ cups mashed banana)

2 large eggs plus 1 egg white (or 3 eggs)

¼ cup pure maple syrup, 78g

1 teaspoon vanilla extract

1 ½ cups packed fine blanched almond flour, 180g

1 cup oat flour (or almond flour), 100g

½ cup unsweetened cocoa powder, 40g

1 tsp baking soda

2 tsp espresso powder (optional)

½ teaspoon salt

½ cup semi-sweet chocolate chips, 90g (dairy free if desired), plus 2 tbsp extra chocolate chips for sprinkling on top

Note: You can replace the chocolate chips with chopped walnuts or pecans

Instructions:

1.    Preheat the oven to 350 degrees F. Line an 8 ½ x 4 ½ inch loaf pan with parchment paper. Grease the pan to prevent sticking.

2. In a large bowl, whisk together the mashed bananas, eggs plus egg white, maple syrup and vanilla extract until well combined. Add in the almond flour, oat flour and sift in cocoa powder (optional), baking soda and salt. Use a wooden spoon to combine. Fold in the ½ cup chocolate chips.

3. Pour batter into prepared loaf pan, smoothing the top with a spatula. Sprinkle 2 tablespoons of chocolate chips on top. Bake for 50 minutes-65 minutes or until the tester comes out almost clean in the middle of the bread.

4. Cool banana bread for 10 minutes in the pan, then remove and transfer to a wire rack to finish cooling completely. Once cool, cut into 12 slices.  Top with your favorite nut butter or butter and sprinkle with a little sea salt.

5. Store in fridge up to 4-5 days or freeze your slices up to 2 months.
