Creamy Pumpkin Pie Jello
This high protein Creamy Pumpkin Pie Jello is the perfect combination of cozy fall flavors and light, nourishing ingredients. It’s quick to make, easy to store, and a fantastic way to enjoy pumpkin season without the extra calories. Whether you enjoy it as a snack, dessert, or even a festive holiday treat, this recipe will become a seasonal favorite.
Ingredients:
1 cup milk, 240g (any milk, I used soy)
1/4 cup plus 2 tbsp maple syrup, 120g (use any sweetener and adjust amount to your liking)
7g gelatin powder, or one packet (I use the Organika Bovine Gelatin)
1 ½ cups plain Greek yogurt, 360g
3/4 cup pumpkin puree, 180g
1 tsp vanilla extract, 4g
Pinch of salt
1 tsp pumpkin pie spice, heaping teaspoon (or cinnamon)
Pumpkin Pie Spice Mix: (Makes 16 Teaspoons)
Ingredients:
3 tbsp ground cinnamon
1 tsp ground nutmeg
2 tsp ground ginger
1 tsp ground allspice
1 tsp ground clove
In a small mixing bowl, add the ground cinnamon, nutmeg, ginger, allspice, and cloves. Stir until all the spices are well combined. Transfer the spice mix into an airtight jar or container. Store in a cool, dry place like your pantry, and it will keep fresh for up to one year!
Creamy Pumpkin Pie Jello Instructions:
Add your Greek yogurt to a large measuring cup (4 cup) or the actual container you will store it in and set aside.
In a medium sized pot add your milk, gelatin, sweetener, pumpkin pie spice, salt and vanilla. Get this to a slight simmer stirring frequently.
Next add your pumpkin puree and stir until it is at a simmer. Remove from heat.
Let mixture cool for 2-3 min before pouring it into your Greek yogurt.
Mix until it has fully incorporated, and add it to a container with a lid or divide the mixture into four serving glasses.
Refrigerate 3-4 hours until completely set
Refrigerate covered for 4-5 days.
When ready to serve, I like to add whipped cream to the top with a sprinkle of pumpkin pie spice or cinnamon
