Protein Breakfast Berry Crumble
Start your morning with this High-Protein Breakfast Berry Crumble — warm, juicy berries topped with a golden protein crumble… all for 190 calories, 12g protein, and 6g fiber! This single-serve recipe is perfect for busy mornings, healthy meal prep, or a cozy high-protein dessert.
Made with simple ingredients, this crumble comes together in minutes and tastes amazing hot or cold. Add a serving of Greek yogurt on top for an extra boost of protein!
Ingredients:
¾ cup berries, frozen or fresh (I used blueberries and raspberries)
1 tsp chia seeds
1 tsp sweetener of choice, optional (I did not use)
½ tsp lemon juice
Crumble:
2 tbsp rolled oats
1 tbsp vanilla protein powder or almond flour (I used whey isolate)
½ tbsp sweetener of choice (I used maple syrup)
2 tsp nut butter (I used peanut butter)
Dash of cinnamon
Instructions:
Preheat oven to 325F
In a ramekin, add your berries, chia seeds, sweetener if using and lemon juice. Set aside
In a small bowl, add all the crumble ingredients, using a spatula mix all the ingredients until all the dry ingredients are hydrated and clumps are formed.
Add the crumble to the top of the berries
Bake for 25-30 min, I like to cover with parchment at the 15-20 min mark so the crumble doesn’t burn. You want the berries to be hot and juicy.
Eat hot or cold, add a serving of Greek yogurt for extra protein.
The breakfast crumble alone will keep in the fridge 3-4 days.
