Ingredients:

Crust

1 ½ cups almond flour, 180 g

2 tbsp ground flaxseed, 14 g

4 tbsp melted butter, browned, 56 g

2 tbsp maple syrup, 30 g

1/8 tsp salt

½ tsp cinnamon

Cottage Cheese Filling

1 ½ cups 2% cottage cheese (or ricotta), 330 g

1/3 cup plain Greek yogurt, 80 g

2 large eggs

¼ cup maple syrup, 60 g

1 tsp vanilla extract, 4.2 g

½ tsp cinnamon

1/8 tsp salt

Apple Topping

2 tbsp butter, 28 g

1 ½ medium apples, finely diced (Honeycrisp), 180 g

2 tsp lemon juice, 10 g

2 tbsp maple syrup, 30 g

1 tsp cinnamon

1 tsp vanilla extract

Pinch salt

Instructions: 

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8 pan with parchment.

  2. Crust: Mix almond flour, flaxseed, cinnamon and salt.  Then add your melted butter and maple syrup, mix until everything is well hydrated.  Press into the pan and bake 10–12 minutes, until lightly golden. Let it cool.

  3. Apple Topping: Melt butter and then add the rest of the ingredient’s and cook apples on medium heat for 5 min, until the apples soften. Set aside to cool while you prepare the filling.

  4. Filling: Add all ingredients into a blender and blend until smooth.

  5. Pour over cooled crust and evenly spoon over the apples all over.

  6. Bake for 28–32 minutes, or until just set in the center.

  7. Cool completely, then refrigerate at least 4 hours or overnight.

  8. Slice into 16 bars and enjoy!

  9. Refrigerate 4-5 days in an airtight container or freeze cut bars for up to 2 months
