Greek Yogurt Brownies

These Greek Yogurt Brownies with Ganache are perfect for family gatherings, potlucks, or a cozy night in. They look impressive, taste indulgent, and yet have a wholesome touch thanks to the Greek yogurt. Pair with a glass of milk, coffee, or even a scoop of vanilla ice cream for the ultimate treat!

Ingredients:

¼ cup almond flour (or oat flour), 28g
¼ cup unsweetened cocoa powder, 25g
¼ tsp sea salt
½ cup semisweet chocolate (4 oz, chopped or 113g)
2 tbsp butter (or coconut oil, melted), 28g
½ cup granulated sugar (use ay granulated sugar of your choice), 100g
¾ cup vanilla Greek yogurt or plain (dairy-free will also work), 170g
2 large eggs
1 tsp vanilla extract, 5g
½ cup chocolate chips, 85g

Chocolate Ganache:
½ cup semisweet chocolate (4 ounces or 113g)
½ cup heavy cream (or full fat coconut cream), 120g
½ tsp vanilla extract, 2.5g

Instructions: 

1. Preheat oven to 350 degrees grease and line a 9×9 baking pan and set aside

2. Mix almond flour, cocoa powder and sea salt in a small bowl; set aside.

3. Melt chocolate and butter together in the microwave or double boiler. Mix until completely melted.

4. Mix in sugar, Greek yogurt and vanilla.  Mix in eggs, one at a time until the batter is completely smooth.

5. Add dry ingredients, whisk until just incorporated. Then add the chocolate chips

6. Pour batter into prepared pan and bake for 20 to 25 minutes until the top is just barely set and the edges are slightly pulling away from the sides of the pan. I prefer 20 minutes; it will give you a softer center

7. When brownies are finished baking, set aside to cool while you make the ganache.

Make the Ganache:

1. Add heavy cream to a small saucepan and warm over medium-high heat until it just begins to bubble. Do NOT let it boil.

2. Turn off heat and whisk in chopped chocolate and vanilla until the mixture is dark and smooth.

3. Remove from warm burner and let cool slightly, 3-4 minutes. The ganache will thicken as it cools

4. Once the ganache is slightly cooled, pour it over your brownies.

5. Let the ganache firm up at room temperature or place in the refrigerator to speed up the process for about 1 hour.

6. Remove from refrigerator, cut and serve at room temperature, or serve cold!

7. Keep refrigerated up to 5 days, or freeze individual slices up to 2 months.
