Ingredients:
2 1/2 cups almond flour
3/4 cup tapioca flour
1/3 cup coconut flour
2 tsp baking soda
1/2 tsp salt
2 cups chopped peaches, 4 medium peaches (or berries, chopped apple, chopped plums)
3 eggs
½ cup maple syrup (any sweetener)
1/2 tbsp apple cider vinegar
1/4 cup butter, melted & browned (or melted coconut oil)
2 tsp vanilla extract
Cinnamon Sugar:
¼ cup coconut sugar (any brown sugar sweetener)
1 tsp cinnamon
Instructions:
Pre-heat oven to 350° F (175° C). Grease and line a 9-inch springform pan. You can also use a square 9x9 pan, grease and line with the parchment overhanging for easy pull out.
Combine eggs, maple syrup, apple cider vinegar, melted butter ad vanilla in a bowl, whisk until combined.
Add the baking soda and salt to wet ingredients, whisk thoroughly.
Add your dry ingredients, using a spoon or spatula, mix until it is just incorporated.
Add half the batter to the pan, spread out in an even layer. Next, add 1 cup of your chopped peaches, spread out evenly. Sprinkle half the cinnamon sugar.
Add the remaining batter, the remaining 1 cup of peaches and sprinkle with the remaining cinnamon sugar.
Sprinkle the sliced almonds evenly over the top before baking.
Bake in the oven for 45-55 min. Use a toothpick to make sure the middle is cooked through.
Cool completely, dust with powdered sugar. Serve with whipped cream or warm with ice cream.
