Berry Cottage Cheese Bars

These Berry Cottage Cheese Bars are the perfect healthy treat – high in protein, naturally sweetened, and packed with fruity flavor. Whether you're craving a snack or want a nourishing dessert, these bars deliver all the goodness without the guilt.

Ingredients:

1 cup cottage cheese, 210g (drain for 10 minutes is there is too much liquid)

2 large eggs or 3 egg whites

Zest of 1 lemon, 1 tbsp

2 tbsp lemon juice, freshly squeezed, 30g

½ cup raw cane sugar, 100g (any sweetener)

¼ cup coconut flour, 28g (or 1 cup almond flour, 100g)

1 tsp baking powder, 4g

½ tsp salt, 3g

1 cup fresh or frozen berries, 140-150g (I used ½ cup raspberries ½ cup blueberries)

Instructions: 

  1. Preheat oven to 350°F (175°C). Grease & line an 8x8-inch pan with parchment paper.

  2. In a blender or food processor, combine, cottage cheese, eggs, lemon zest, lemon juice, and sweetener.  Blend until smooth and creamy.

  3. Add baking powder and salt. Blend until incorporated

  4. In a medium sized bowl, pour the lemon cottage cheese mixture add your flour and mix until incorporated. If using coconut flour, let it rest for 5 min

  5. Pour the batter into the pan.  Add your berries,

  6. Bake for 25-30 min if using coconut flour, bake 22–25 minutes if using almond flour, or until the center is just set and a toothpick comes out with a few moist crumbs.

  7. Let cool completely before slicing. Chill if you prefer a denser, fudgy bar. Add powdered sugar just before serving
